I hope everyone had an amazing Christmas break! I have been on the go non-stop since... well, since who knows.
I worked until Christmas eve and had a hard time getting into the Christmas 'spirit'. But I did make the worlds best Salted Caramel Cupcakes ever! Using a recipe from Sprinkle Bakes but tweaking it a little.
I attempted the sugar caramel decoration but failed in all three attempts! I didn't add the caramel in the middle and doubling the recipe gave me 47 cupcakes and enough frosting to cover Africa - having to throw out 2 thirds of it. If I baked often I would have had a slight idea about quantity but... I am a baking noob!
After making the cake batter it was fluffy much like peaked egg whites and i thought it would create a dry flaky cake, but after baking my trial cake my concern was replaced with ecstasy! WOW! Seriously, these cakes taste like maple syrup pancakes, they are delightful moist and light all at the same time, mmm if only they weren't so bad for the waist.
I thought the frosting lacked body, lacked salt! So I added quite a lot more and melted caramel chocolate pieces to give it more of a caramel flavour, I think I needed to cook the sugar a little longer...
The marriage of the brown sugar cake and the salted caramel frosting came together, it was pure indulgence! This is what a real salted caramel cake should taste like. needless to say, I got shining reviews from my work mates and family.
Aaaand that was the start to of my weight gain! 2 kilos over the holiday break!! Can you believe it? I can...
We hosted Christmas day at our house and asked everyone to bring something, I knew there would be a fair amount of food, but I didn't think I would eat most of it!!
Seafood, cold meats, cheeses, ham, salads, creamy potato salads, turkey, stuffing, ricotta cake, my dads Christmas ice cream, Dave's mum's summer pudding.... oh goodness then I binged on chocolate santas in the evening, not surprised 2 kilos crept up on my ass or should I say stomach cos thats where I see it!
Nevermind, plenty of things I can do about it but first I want to share my (adapted from a good friend of mine's) succulent, moist Turkey recipe with you, tomorrow xoxox
